Al Pastor Papi is a Bay Area food truck specializing in Mexico City-style al pastor carved from a vertical spit.
Overview
The San Francisco Chronicle included Al Pastor Papi in its 2019 guide to the best food trucks in the Bay Area, when the truck was about a year old. It was found mostly at Off the Grid gatherings, the rotating food-truck markets held around San Francisco and the wider Bay Area, and it posted its schedule on Instagram.
The menu centers on al pastor in the Mexico City manner: pork marinated in chiles and spices, roasted on a trompo and served as tacos or as gringas, a flour-tortilla preparation with melted cheese. The Chronicle listed the taco and gringa at modest truck prices.
Context
Spit-roasted al pastor became more common on Bay Area trucks in the late 2010s, as operators sought to reproduce the style of Mexico City taquerías rather than griddling marinated pork on a flat-top.
