Overview

The restaurant is named for Texcoco, a town east of Mexico City known for lamb barbacoa traditionally cooked in earthen pits. The Chula Vista dining room runs cafeteria style. San Diego Magazine's Troy Johnson singled it out as the region's leading barbacoa house.

Lamb is sold by cut, fatty or lean, with fresh corn tortillas and toppings so diners can build their own tacos. The broth from the roasting is served in mugs, and a chickpea soup appears at breakfast. A whole roasted lamb head is available, and the menu has included tacos of chapulines (grasshoppers).
