Bambi Vegan Tacos

From WikiTacos, the taco encyclopedia · Taquería

Bambi Vegan Tacos is a plant-based taquería on I Street in Midtown Sacramento, California, founded by Chad Novick and Liz Gibb, that started as a taco truck.

History

Chad Novick and Liz Gibb began Bambi as a taco truck before opening a permanent shop in Midtown, according to the Sacramento Bee, which listed it among a writer's five favorite taco spots around Sacramento. SACtoday describes the cooking as made from scratch with farm-fresh produce.

All fillings are vegan. Instead of a Baja-style fish taco, the kitchen uses cider-battered cauliflower; other options include diced cremini mushrooms prepared as a stand-in for ground beef and a house faux chorizo made with seven vegetables. The shop keeps a short list of about four taco options.
