Barbacoa Estilo Taxco is a weekend lamb barbacoa stand on Paloma Avenue in South Los Angeles, operating under a large tent on Saturday and Sunday mornings.

Overview

Named after Taxco, the silver-mining town in the Mexican state of Guerrero, the stand opens from early morning to early afternoon on weekends only. The Infatuation describes it as a veteran operation with sit-down service under its tent and advises arriving early and bringing cash.

Lamb is rubbed with adobo and roasted until tender, then sold by the pound or in tacos on freshly pressed corn tortillas with a chunky salsa verde. A cup of lamb consommé is served on the side, in keeping with the central Mexican custom of drinking the cooking juices with barbacoa.
