Birrieria Calvillo Aguascalientes is a regional Mexican restaurant on Valley Boulevard in South El Monte specializing in Aguascalientes-style goat birria.

Birrieria Calvillo Aguascalientes is at 12056 Valley Boulevard in South El Monte. A 2015 PBS SoCal list of Mexican restaurants in the San Gabriel Valley said its owners had been in business for close to a decade at that point. The name refers to Calvillo, a town in the central Mexican state of Aguascalientes.

The restaurant concentrates on birria cooked in the Aguascalientes manner: goat shredded into a spicy stew with tomato, onion and oregano and served with a hot salsa. Diners can have it in a bowl, in a quesadilla or in tacos.

Birria is most closely identified with Jalisco, but neighboring states including Aguascalientes and Zacatecas have their own versions, typically differing in the chiles used and whether the meat is steamed, roasted or stewed. In Los Angeles, goat birria shops long predated the recent popularity of beef birria and quesabirria.
