Birriería David
Birriería David is an eight-stool birria counter on the upper floor of Guadalajara's Mercado Alcalde, run by three generations of one family for about sixty years.
History
According to the Michelin Guide, three generations have refined this birria over roughly six decades, and the founder's son and grandson run it today. The stall sits on the second floor of the Mercado Alcalde, with only eight stools along a stainless-steel counter, so waits are common. It was recommended in the 2026 Michelin Guide Mexico, the first edition to cover Jalisco.
Menu
Birria is the only dish. Customers choose a small or large plate and a cut, either surtida (mixed) or carnaza (lean meat). The meat arrives in pieces that are browned and crisp outside and tender within, with a ladle of consommé and warm tortillas for making tacos.
