Birriería y Menudería Guadalajara is a small group of San Diego restaurants specializing in birria and menudo, notable as one of the few places in the city serving goat birria.
Overview
As its name indicates, the business focuses on two dishes from the state of Jalisco, whose capital is Guadalajara: birria, a chile-braised meat stew, and menudo, a tripe soup traditionally eaten on weekend mornings. In Jalisco birria is classically made with goat, but in San Diego, as across Southern California, beef has become the dominant version, and San Diego Magazine pointed out in 2025 that this shop is one of the few in the city still offering chivo. The magazine described the goat as gamy and placed the restaurant on its list of the forty best tacos in the county.
The business operates more than one location. Goat birria is typically served as a stew with its broth, or as tacos on corn tortillas topped with onion, cilantro and lime.
