Overview
Las Michoacanas was named in San Diego Magazine's 2025 survey of local chefs' favorite tacos by Claudia Sandoval, the winner of the cooking competition MasterChef, who praised the carnitas and the shop's custom of handing out a complimentary taco while orders are prepared. It operates in Rolando, an eastern San Diego neighborhood near La Mesa, and in Chula Vista.
Carnitas
Michoacán, in west-central Mexico, is the home of carnitas, and the name of the shop identifies its cooks with that tradition. Pork, typically shoulder along with skin, ribs and other cuts, is simmered slowly in lard in a large pot until tender, then allowed to brown in the fat so the outside crisps. It is sold by weight with tortillas, salsa, onion and cilantro, or as individual tacos.
