Carnitas Uruapan (La Mesa)

Carnitas Uruapan is a carnitas specialist in La Mesa, San Diego County, whose roots trace to a shop near the old El Toreo bullring in Tijuana.

History

According to the San Diego Reader's 2019 taco issue, Carnitas Uruapan began in Tijuana close to El Toreo, the downtown bullring that was demolished in 2007. In the early 1990s the business moved north to Spring Valley, and when construction of State Route 125 displaced it, it relocated to Lemon Grove before landing at 4233 Spring Street in La Mesa. The founding owners have died; longtime cook Marco Rodríguez, who is not related to the family, carries on the recipe. The business shares its name, taken from the Michoacán city of Uruapan, with a separate carnitas shop in Santa Ana, and the Reader did not connect the two.

The house method follows the Michoacán style: pork is simmered for about three hours in lard flavored with orange peel until the outside crisps and the meat turns tender. It is sold for tacos and by weight.
