CHAAK Kitchen is a Yucatecan restaurant in Tustin, in Orange County, that received a Michelin Bib Gourmand in 2021 for its smoke- and spice-driven cooking of the Yucatán Peninsula.

Overview

Chaak is the name of the Maya rain god, and the restaurant's name points to its focus on the food of the Yucatán Peninsula. In September 2021, when the Michelin Guide announced its new California Bib Gourmands, it included CHAAK Kitchen and described its cooking as vibrant and centered on smoke and spice. It was the only Mexican restaurant from Orange County on that year's list of new Bib Gourmands.

Yucatecan cooking

The cuisine of the Yucatán differs sharply from the northern and central Mexican food that dominates Southern California. Its signature dishes include cochinita pibil, pork marinated in sour orange and achiote and slow-roasted in banana leaves; panuchos and salbutes, fried tortillas topped with shredded meat; and relleno negro, a turkey stew blackened with charred chiles. Meals are typically accompanied by pickled red onion and fiery habanero salsas. Many of these dishes are served as tacos, making Yucatecan restaurants an alternative destination for taco eaters.
