From WikiTacos, the taco encyclopedia · Taquería

Chichén Itzá is a Yucatecan restaurant stall inside Mercado La Paloma in South Los Angeles, founded by Gilberto Cetina, known for cochinita pibil.

Overview

Time Out credits Gilberto Cetina with founding the stall; his son, Gilberto Cetina Jr., later opened the seafood counter Holbox in the same market. The stall is located across the Harbor Freeway from the University of Southern California, according to LAist.

The best-known dish is cochinita pibil, pork marinated in achiote and citrus and slow-roasted in banana leaves, paired with a habanero salsa. Time Out also highlights poc chuc, grilled citrus-marinated pork, and LAist mentions agua de chaya, a drink made from a Yucatecan leafy green. LAist included it in a 2015 list of ten notable tacos in Los Angeles, and Time Out later listed it among the city's 33 best tacos.
