The birria uses lamb, a choice that sits between the goat of traditional Jalisco birria and the beef that dominates in Southern California. It is served with its consommé on blue corn tortillas and finished with salsa macha, an oil-based salsa of dried chiles, nuts and seeds, and pickled onions. The pickled onion cuts the richness of the braised meat, while the salsa adds crunch and a toasted chile flavor.
