Cocula's Taquería is a taquería and taco truck in Fowler, California, south of Fresno, known for quesabirria.

History

The business has a restaurant in Fowler and a truck that usually parks just south of town along Highway 99, with a second spot in a downtown Fowler lot. Fresno's Taco Truck Throwdown, an annual contest started in 2011 by the Fresno Grizzlies minor-league baseball club, brings trucks to the ballpark where fans and a judging panel pick winners. Cocula's won the Judge's Choice award in 2022 with its quesabirria. The name refers to Cocula, a town in Jalisco closely associated with birria and mariachi music.

Quesabirria, in which tortillas are dipped in consomé and filled with shredded beef and cheese before being griddled, is the signature. The menu also includes tacos, burritos with red rice and beans, tortas and sopes.
