Don Chamorro
Don Chamorro is a morning stall in Querétaro's Mercado de La Cruz specializing in tacos of chamorro, slow-cooked pork shank.
Overview
Don Chamorro is inside the Mercado Josefa Ortiz de Domínguez, commonly called La Cruz, at Garibaldi 73 in the Centro. CódigoQro described it in 2022 as fixed in the city's food memory, and Will Fly for Food, in a guide updated in 2026, reported that the stall is very popular with locals. Service runs from 7 a.m. to about 2:30 p.m., and CódigoQro advised arriving for breakfast or before noon.
Menu
The specialty is chamorro, the pork shank, cooked until soft and juicy and served in tacos or as a plate for two with tortillas so diners can make their own tacos.
Querétaro's taquerías draw on styles from other regions as well as local ones; CódigoQro noted in 2022 that several of the city's best-known stands advertise the taco flavor of Arandas, a town in the Altos de Jalisco, and the city's markets and side streets also hold many tacos de guisado and gordita stands.
