Many Mexican supermarkets in Southern California include a cocina or taquería counter, and OC Weekly's 2015 guide to Orange County tacos pointed readers to the one at El Camino Real Market in Anaheim. The guide recommended its guisado tacos, filled from rotating steam trays with stews such as chicharrón in red salsa and espinazo, or pork backbone, with verdolagas.

Guisados

Tacos de guisado are filled with home-style braises rather than grilled meats, and are associated with the fondas and markets of central Mexico. Chicharrón en salsa roja softens fried pork rind in a tomato and chile sauce until it turns tender. Espinazo con verdolagas pairs bony pork pieces with purslane, a succulent green that grows wild in much of Mexico and the American Southwest, in a green tomatillo sauce. Served on corn tortillas with rice or beans, such tacos offer a cheaper and more varied alternative to the standard menu of carne asada and al pastor.
