El Carnerito is a barbacoa restaurant in Tulancingo, Hidalgo, publicly praised by former Mexican president Andrés Manuel López Obrador.

Overview

Tulancingo has its own style of barbacoa, which El Financiero describes as made by hand over about twelve hours in earth ovens. El Carnerito is identified as the Tulancingo barbacoa spot favored by Andrés Manuel López Obrador, who called the town's barbacoa among the best in Mexico.

As throughout Hidalgo, barbacoa here is pit-roasted meat, traditionally lamb, wrapped in maguey leaves and cooked slowly underground until it falls apart. It is eaten in tacos on corn tortillas with salsa, onion and cilantro, alongside consomé made from the juices that collect during cooking.

Context

Tulancingo is one of several Hidalgo towns, with Actopan, Ixmiquilpan, Atotonilco el Grande and Villa de Tezontepec, that El Financiero recommends for barbacoa.
