El Cora Birria is a birria specialist operating inside a gas station on Fruitvale Road in south Sacramento, California, serving Tijuana-style quesabirria made from a family recipe.

History

The business runs from a counter inside a gas station in south Sacramento. SACtoday says the birria follows a family recipe, and the Sacramento Bee named it among a food writer's five favorite taco stops in the region.

The menu is short and built around birria. Quesabirria tacos come with either beef (res) or goat (chivo), and are served with a cup of consomé for dipping, the style popularized in Tijuana and later throughout California. Because the operation is small, the menu focuses almost entirely on that one preparation. Among the five spots on the Bee's list, El Cora was the one devoted to a single dish, alongside broader taquerías and a vegan shop.
