El Fogon Taco Shop
El Fogon Taco Shop is a small Sonoma County chain known for spit-roasted al pastor and the machete, an oversized Mexico City-style quesadilla.
Locations
Sonoma Magazine has listed El Fogon at 623 Fourth St. in downtown Santa Rosa and at 6576 Oakmont Drive in Santa Rosa's Oakmont area. An earlier al pastor survey by the magazine also listed a location at 6650 Commerce Blvd. in Rohnert Park. The business's website is elfogontacoshopca.com.
Menu
The magazine's al pastor survey named El Fogon the best spit-roasted version in the county, noting that it is one of the few local spots to cook the pork on a traditional trompo and serve it with sweet pineapple. Its dining editor also highlighted the machete, a corn tortilla about the length of a forearm filled with al pastor, cheese, sour cream, tomato and cilantro, which she noted is not strictly a taco. The restaurant also serves the pambazo, a Mexico City sandwich dipped in guajillo sauce and griddled.
Context
Machetes are a street-food specialty of Mexico City, named for their long, blade-like shape.
