French tacos
French tacos are a French fast food of meat, French fries, cheese and sauce folded inside a large flour tortilla and pressed on a grill, a dish born in the suburbs of Lyon in the 2000s that has little in common with the Mexican taco.
History
The origin of the French taco is disputed. Many accounts, including the documentary Tacos Origins by Bastien Gens, place its birth in the late 1990s or early 2000s in snack bars in the Lyon suburbs of Vaulx-en-Velin and Villeurbanne, where proprietors were often of North African descent. A different account credits Moroccan-born brothers Abdelhadi and Mohammed Moubarek, who ran a kebab shop in Savoie, with inventing it in the mid-2000s, while the series 66 minutes named Mohamed Soualhi, founder of Tacos Avenue, as its creator in Lyon. Grenoble has its own claim: the first O'Tacos opened there in 2007, founded by Patrick Pelonero, a former construction worker who said he had never been to Mexico.
By the late 2000s the dish was popular with teenagers and young adults across the Rhône-Alpes region, and chain advertising and social media spread it throughout France. The Local reported that more than 80 million French tacos were eaten in France in 2021, more than hamburgers or kebabs, and that O'Tacos operated about 300 restaurants in France.
Characteristics
A large flour tortilla is filled and folded into a closed rectangle, then grilled in a panini press until crisp. The filling is chosen à la carte: chicken, turkey or beef as mince, escalope, nuggets, cordon bleu or shawarma; French fries; cheese, often as a melted sauce; and kebab-shop sauces such as white sauce, algérienne, harissa, ketchup or barbecue. Most French tacos sold in France are halal and pork-free. Sizes range up to very large formats, and health writers have criticized their calorie counts.
Commentators compare the dish to a burrito, quesadilla, panini or kebab more than to a taco, and a Vaulx-en-Velin newsletter described it as a marriage of all three. To avoid confusion, people in France sometimes call the Mexican dish a taco mexicain.
Spread
The Moubarek brothers opened Tacos de Lyon in Casablanca in 2013, and Morocco had dozens of outlets within a few years. French tacos are also sold in Algeria, Senegal, Belgium, Switzerland, Canada, Vietnam and the United States, and O'Tacos has expanded into the Netherlands, Germany, Italy, Belgium and Spain.

Ingredients
- 2 large flour tortillas (30 cm)
- 300 g chicken breast, thinly sliced
- 1 tsp paprika, 1/2 tsp cumin, salt and pepper
- 1 tbsp oil
- 300 g French fries, cooked crisp
- For the cheese sauce: 15 g butter, 1 tbsp flour, 200 ml milk, 80 g grated cheddar or Emmental
- 2 tbsp algérienne sauce, or mayonnaise mixed with harissa
- Shredded lettuce (optional)
Steps
- Season the chicken with paprika, cumin, salt and pepper and sauté in the oil until cooked through.
- Make the cheese sauce: melt the butter, stir in the flour for 1 minute, whisk in the milk and simmer until thick. Off the heat, stir in the cheese.
- Lay a tortilla flat. In the center spread sauce, then add a layer of chicken, a handful of fries and a generous spoonful of cheese sauce.
- Fold the bottom edge up over the filling, then the sides, then the top, to make a closed rectangle.
- Grill seam side down in a panini press or a heavy skillet weighted with a pan until golden and crisp on both sides, about 3 minutes per side.
Fillings are fully customizable; ground beef, merguez-style sausage and cordon bleu are common choices.
