Guadalupe Zárate

Guadalupe Zárate was a taquero from Coatzingo, Puebla, who set up a taco stand in Tijuana in 1950 and is credited with making early birria served with consommé there.
Biography
Zárate moved from Coatzingo, in the state of Puebla, to Tijuana, where he opened a taco stand in 1950. The stand first sold asado and al pastor tacos. Accounts of the dish's history, summarized from a Food Network explainer, report that he was the first to make birria with consommé in Tijuana, the pairing at the root of the city's birria taco style. Little else about his life has been published.
