Guerrilla Tacos
Guerrilla Tacos is a Los Angeles taco business founded by chef Wes Avila, which began as a cart and truck serving seasonal, farm-driven tacos before moving into a restaurant.
History
Wes Avila started Guerrilla Tacos as a cart and then a truck, building a reputation for combining the street taco with farm-to-table sourcing. LAist reported in 2016, at a party marking the business's fourth anniversary, that a brick-and-mortar restaurant would open in the Arts District. The truck served its last day on July 19, 2018, in Silver Lake, where L.A. TACO reported that more than 300 people came to the farewell and it sold out.
Guerrilla Tacos won L.A. TACO's Taco Madness in 2015, when the publication called it the most talked-about taco truck in the city.
Menu
The menu changed constantly according to the season and did not include standards such as al pastor. Dishes cited over the years include a sweet potato taco, a sea snail taco, fish tostadas, an ahi poke tostada and a sausage taco topped with a fried egg.
