Herbívora is a vegan taquería in central Oaxaca City that recreates classic taco fillings with mushrooms, soy and vegetables.

Overview

Oaxaca Travel Tips lists Herbívora in the Centro section of its 2026 guide as a fully vegan taco spot. The menu translates familiar fillings into plant-based versions: portobello mushroom prepared like barbacoa, breaded oyster mushroom, papas con chorizo, a soy campechano, a plant-based chicharrón and a chile relleno, along with huitlacoche, the corn fungus long eaten in Mexico. The guide gives no street address or founding date.

Context

Oaxaca de Juárez has its own taco culture built on local ingredients such as tasajo (thin salted beef), cecina enchilada (chile-rubbed pork), chorizo, quesillo and chile de agua, served alongside the tlayudas and memelas the state is known for. Street carts are not allowed to operate in the city on Wednesdays, although the rule is often relaxed on holidays.
