Humberto's Taco Shop is a round-the-clock taco shop on 25th Street in San Diego, best known for its stewed beef-head (cabeza) tacos and its late-night crowds.

Overview

Humberto's operates from 1015 25th Street and keeps its doors open 24 hours a day. In a 2015 taco survey, the San Diego Reader singled it out for the sheer volume of beef it moves: the kitchen was cooking more than 180 pounds of meat in each eight-hour stretch to keep up with demand. The paper noted that the busiest hours come late at night, with Friday nights drawing especially heavy lines.

The shop sits in the tradition of the all-night San Diego taco shop, where burritos, plates and tacos are served from a counter to a mixed crowd of night-shift workers, students and people heading home from the bars.

The signature order is the taco de cabeza, made from beef head meat cooked low and slow until it takes on the texture of a stew and finished with a green salsa. The Reader also pointed readers toward an old-school hard-shell beef taco, the kind of crisp, ground-beef taco that has been a fixture of Southern California taco shops for decades.
