Jack in the Box tacos are the deep-fried hard-shell tacos sold by the San Diego-founded fast food chain Jack in the Box, filled with a seasoned beef and soy mixture and topped with American cheese, lettuce and taco sauce; they are the chain's best-selling item and a cult favorite.

History

Jack in the Box was founded by Robert O. Peterson in San Diego on February 21, 1951, when he converted one of his Topsy's Drive-In locations on El Cajon Boulevard. Although the chain is known for hamburgers, it has sold tacos since its early years in the 1950s, and the taco has become its most popular product. In 2017 the Wall Street Journal reported that the company sold 554 million tacos a year, about a thousand a minute, in an article headlined to say that no one quite knew why.

Production

Unlike most tacos, the Jack in the Box version is assembled in factories. The filling and the corn shell are put together in plants in Texas and Kansas and frozen for shipping and storage. At the restaurant, the whole filled taco is dropped into the fryer, which makes it crisp and notably greasy, and is then opened up for a half slice of American cheese, shredded lettuce and a mild taco sauce made with vinegar, tomato paste, chiles, paprika, onion and garlic.

The filling has been the subject of rumors that it contains no meat at all. According to the chain's published ingredient list, as reported by Tasting Table and Chowhound, the first ingredients are beef, water and ground dark-meat chicken, followed by textured vegetable protein and defatted soy grits, seasoned with chile, onion, garlic, tomato paste and Worcestershire-style flavorings.

Reputation

The taco is both mocked and loved. Critics have compared its look to cat food, the Wall Street Journal likened it to a wet envelope of cat food, and GQ called it unquestionably bad in a piece that nonetheless defended it. Chowhound, by contrast, ranked it first among the chain's menu items in 2025, crediting the combination of meat, cheese and grease. Part of its appeal is price: two tacos sell for 99 cents, a price Chowhound reported had not changed since 2017. A 2006 advertisement featuring a stoner ordering 30 tacos drew protests from a San Diego youth group.
