Komal
Komal is a small corn-focused taquería and tortillería stall in Mercado La Paloma in Los Angeles, run by chef Fátima Juárez, which nixtamalizes heirloom Mexican corn on site.
Overview
Komal sits a few rows from the seafood counter Holbox inside Mercado La Paloma, south of Downtown Los Angeles; The Infatuation notes that it is run by a former Holbox employee. Chef Fátima Juárez draws on the market stalls and taquerías of Mexico City, and the kitchen grinds its own masa from heirloom corn imported from Mexico rather than buying prepared tortillas.
The MICHELIN Guide awarded Komal a Bib Gourmand, its designation for good-quality, good-value cooking, in the 2026 guide, and also included it in a roundup of Southern California's best tacos.

The best-known item is the loaded Taco Sonia, served alongside short rib (costilla) tacos and carnitas. Other corn dishes cited by the MICHELIN Guide include a squash blossom and sweet corn quesadilla, tlacoyos topped with nopales, and fried plantain balls served in black mole.
