La Fonda de Los Carnalitos

From WikiTacos, the taco encyclopedia · Taquería

La Fonda de Los Carnalitos is a Redwood City restaurant opened by brothers Luis Santos and Alfredo, owners of the Los Carnalitos taco truck, to serve Mexico City fare.

History

Luis Santos and his brother Alfredo opened the Los Carnalitos taco truck in 2015 at 2907 El Camino Real in Redwood City and added a restaurant in Hayward in 2017. In March 2021 Palo Alto Online's Peninsula Foodist reported that the brothers would open a third business, La Fonda de Los Carnalitos, at 820 Veterans Blvd., Suite B, in the former Frida Colibries space, with an opening targeted for spring of that year.

The restaurant was planned as a tribute to the small family-run fondas of Mexico City. Plans called for more elaborate plates than the truck serves, including mole and mole verde with handmade corn tortillas, along with appetizer versions of the truck's choriqueso and gorditas and guacamole served with chicharrones in place of chips.

Context

The Los Carnalitos truck was featured in the San Francisco Chronicle's 2019 list of top Bay Area food trucks for its Mexico City-style carnitas, cabeza and lengua.
