La Vaca Birria

From WikiTacos, the taco encyclopedia · Taquería

La Vaca Birria is a birria-focused taquería on 24th Street in San Francisco's Mission District that cooks over a live mesquite fire.

Overview

Although the name points to birria, the shop is notable for grilling over burning mesquite wood, an unusual setup for a small Mission taquería. Its menu includes birria tacos, carnitas, and house-made brisket and chorizo tacos.

In the San Francisco Standard's 2025 poll of local chefs and restaurateurs, the owner of a San Francisco pizzeria named La Vaca Birria the best taco spot in the city.

Context

Birria, a chile-braised meat stew from Jalisco, became one of the most visible taco styles in the Bay Area in the early 2020s, and several Mission shops and trucks now specialize in it. La Vaca Birria stands out for combining the stew with wood-grilled meats.
