Lindo Michoacán is a taquería on South Anaheim Boulevard in Anaheim known for grilled-meat tacos on homemade tortillas and Michoacán-style queso de puerco.

OC Weekly's 2015 guide to Orange County tacos recommended the restaurant's second location, Lindo Michoacán #2, on South Anaheim Boulevard, for grilled-meat tacos served on tortillas made in house. The guide also advised readers to ask for queso de puerco in the style of Michoacán, the state named in the restaurant's title.

Queso de puerco

Despite its name, queso de puerco contains no cheese. It is a head cheese made by simmering a pig's head and other gelatin-rich parts with spices and vinegar until the meat falls apart, then pressing it into a mold so it sets as it cools. Sliced thin, it is eaten cold or warmed in tacos and tortas, often with pickled chiles and onion. In Michoacán it is a common market food alongside carnitas, which come from the same tradition of whole-hog cooking.
