Los Achiotes

From WikiTacos, the taco encyclopedia · Taquería

Los Achiotes is a cochinita pibil taquería in Naucalpan, State of Mexico, on the northwestern edge of the Mexico City metropolitan area.

Overview

The Infatuation includes Los Achiotes in its Mexico City taco guide even though it lies outside the city limits, at Camino a San Mateo Nopala 49 in Naucalpan. The specialty is cochinita pibil, Yucatán's achiote-marinated pork, served in tacos. The guide also recommends the house tamarind agua fresca.

The name refers to achiote, the annatto seed paste that gives cochinita its red color and earthy flavor.

Context

Yucatecan cochinita pibil is widely sold in central Mexico, usually as tacos and tortas with pickled red onion and habanero salsa. Naucalpan is part of the greater Mexico City metropolitan area. Cochinita tacos are traditionally eaten in the morning, garnished with onion pickled in sour orange.
