Los Gusanos de Chucho is a taquería in Querétaro's historic center known for the gusano, a rolled taco of two flour tortillas filled with cheese, al pastor, grilled onion and avocado.
Overview
The taquería is at Avenida San Roque 104 in the Centro. CódigoQro called it a classic of Querétaro food in 2022, describing a comfortable dining room and a large staff that serves quickly, with hours of 2 p.m. to 2 a.m. daily. Sabroso, in a 2025 list of the city's best taquerías, said it was founded decades ago and is known for flour tortillas folded into the shape of a worm, which gives the house specialty its name.

The gusano is made with two flour tortillas filled with cheese, al pastor, grilled onion and avocado. Sabroso also lists al pastor, bistec and chorizo tacos. The name Chucho, a common nickname for Jesús, appears only in the business name; neither source identifies the person behind it.
Querétaro's taquerías draw on styles from other regions as well as local ones; CódigoQro noted in 2022 that several of the city's best-known stands advertise the taco flavor of Arandas, a town in the Altos de Jalisco, and the city's markets and side streets also hold many tacos de guisado and gordita stands.
