Taco gobernador

The gobernador, or governor's taco, originated in Mazatlán, Sinaloa, and has become one of the defining dishes of Mexican seafood restaurants in Southern California. Shrimp are sautéed with onion, tomato and chiles and folded into a tortilla with melted cheese, then griddled until the cheese crisps at the edges. Mariscos restaurants of this kind also serve cocteles, ceviche, aguachile and smoked-fish tacos, and Lent is traditionally their busiest season.
