Menu
Smoked marlin, or marlin ahumado, is shredded and sautéed with onion, tomato and chiles, then folded into tortillas, often with cheese, and griddled. It is one of the signature fillings of Sinaloa and Baja California Sur, where marlin is caught for sport and smoked to preserve it. Shrimp tacos, ceviches and cocteles round out a typical Sinaloan mariscos menu.
