Mariscos y Birriería El Prieto is a family of San Diego County food trucks and stands, headquartered in an El Cajon parking lot, that pairs Sinaloa-style seafood with beef birria.

History

The El Cajon operation has worked out of the same parking lot for more than twenty years, with a food truck out front and a storefront kitchen beside it where the birria is cooked. The business, run by Jorge Vargas, has added other locations, including a lot in Chula Vista. Vargas also owns Don Vargas Birriería y Mariscos in Chula Vista, and a related Taquería by El Prieto in Chula Vista is known for suadero.

Two menus share the counter. The seafood side offers raw tuna with jalapeños, ceviches and cocktails; the meat side centers on birria tacos, with consommé that customers ladle for themselves, plus tripe, mulitas and grilled arrachera. Diners eat under a blue awning at large shared tables.
