Maximiliano Cortés Rocha, known as El Max, is a Hermosillo taquero who sells tacos of grilled beef aguja from a tricycle grill in the city's Central de Abasto.

Career

Cortés started at sixteen as a helper in his father's taquería near Hermosillo's old red-light district. With his brothers he later opened a cart called El Taco Alegre and spent about thirty years working in the city's taquerías before starting his own business in 2019, according to El Imparcial. In 2022 he was 59 and had 43 years in the trade.

He works from a tricycle fitted with a grill inside the Mercado Francisco I. Madero, the Central de Abasto on Bulevar Solidaridad in colonia Sahuaro, open Wednesday to Monday from 7 a.m. to 2 p.m. His specialty is carne asada made from aguja norteña, an inexpensive beef cut, served with refried beans and a simple salsa on flour or corn tortillas, and he also makes burritos. He reported selling up to 15 kilos of aguja a day. As demand grew he added a second tricycle, worked by his brother-in-law Marco Domínguez Cruz, who covers the other side of the market.
