Mesa Agricola is a Mexican restaurant in Escondido, in northern San Diego County, recommended by local chefs for its cochinita pibil and arrachera tacos.

Overview

Mesa Agricola appeared in San Diego Magazine's 2025 survey of the tacos favored by local chefs. Travis Swikard, chef of the San Diego restaurant Callie, named it as his choice, pointing to its cochinita pibil and bistec arrachera. Escondido is an inland city in the North County, about thirty miles north of downtown San Diego.

Cochinita pibil is the classic dish of the Yucatán Peninsula: pork marinated in bitter orange juice and achiote, a paste of annatto seeds, then wrapped in banana leaves and slow-roasted, traditionally in a pit called a pib. It is shredded and served on tortillas with pickled red onion and habanero salsa. Arrachera is skirt steak, the cut most associated with carne asada in northern Mexico, marinated and grilled, then sliced or chopped for tacos. The two dishes represent opposite ends of Mexico, the slow-cooked south-east and the grilled north.
