Metro Balderas takes its name from Balderas, a station on Mexico City's Metro. LAist featured it in a 2013 guide to the best tacos in Los Angeles, choosing it as the city's pick for carnitas and listing its address as 5305 N. Figueroa Street in Highland Park, with service on Saturdays and Sundays.

Carnitas

The restaurant's carnitas are notable for their range of cuts. LAist counted about eight, including ribs, maciza from the pork butt, snout, skin, ear and uterus, each available as a taco. Offering the whole animal by cut, rather than a single mix, is a practice associated with Mexico City and Michoacán carnitas stands, where customers order by part.
