Nixtaco is a small taquería in a Roseville strip mall, in the Sacramento region, that has been a MICHELIN Bib Gourmand since 2021.

Overview

The restaurant's name joins taco with nixtamal, the alkali-treated corn that is ground into masa for tortillas. The MICHELIN Guide named it a new Bib Gourmand in its September 2021 California selections, and the San Francisco Chronicle's report on those additions listed it as the Sacramento region's entry, referring to an upscale taco spot. It retained the Bib Gourmand in the 2025 and 2026 editions.

Michelin's inspectors noted its strip-mall setting and its salsa bar, which offers five salsas, among them a smoky peanut and chipotle salsa and a tangy salsa verde. The salsa bar is the feature Michelin chose to single out, and it gives diners a self-serve choice of heat and flavor for each taco.
