Pablito's had four locations when L.A. TACO visited its North Hollywood shop for a 2019 survey of street tacos in the San Fernando Valley. The business blends Mexican taquería staples with Peruvian flavors, most visibly in its al pastor, which is marinated with ají, the Andean chile pepper. Tortillas are made by hand and come out soft, with a texture the writer likened to flour tortillas.
