Pancho's Takos is an al pastor taquería in the Zona Romántica of Puerto Vallarta, Jalisco, open since 1989 and recommended in the 2026 Michelin Guide.

Overview

Pancho's Takos opened in 1989 on Calle Basilio Badillo, in the cobblestoned Zona Romántica of Puerto Vallarta. It has long been a favorite of both residents and tourists, and lines are common. When the Michelin Guide extended to Jalisco in 2026, Pancho's was one of two Puerto Vallarta restaurants selected. Indoor seating is tight, with a few patio seats, and it opens only in the evening, closing on Sundays.

Al pastor is the signature, piled high in thin slices on corn tortillas and finished with cilantro and onion. The menu also lists quesadillas, cheese alambres, stuffed avocados and gratin potatoes topped with steak, chorizo or pastor. Payment is cash only.
