Overview

South Orange County's master-planned suburbs have fewer independent taquerías than Santa Ana or Anaheim, and Perla's was the Mission Viejo entry in OC Weekly's 2015 county-wide taco guide. The paper listed it on Charlinda Drive and recommended two things: its chorizo tacos and its red salsa.

Mexican chorizo is a fresh pork sausage seasoned with dried chiles, vinegar, garlic and spices such as cumin and oregano, sold loose or in casings and fried until crumbly and red with rendered fat. On tacos it is usually served with onion and cilantro and sometimes with potato. A red salsa, made from dried or roasted chiles with tomato, garlic and onion, is a standard condiment at taquerías, and its quality is often what distinguishes one shop from another; OC Weekly's writers singled out Perla's version for praise.
