Rojo's Tacos is a taco shop on West Lincoln Avenue in Anaheim run by chef Rolando Rubalcava, known for inventive tacos such as a Nashville-inspired spicy tripas taco.
Overview
Rojo's is a chef-run taquería in Anaheim that applies outside influences to standard taco fillings. L.A. TACO writer Gab Chabran included it on a 2020 list of the seven best tripas tacos in Los Angeles and Orange counties, and noted that Rubalcava had earlier drawn attention for a Mexican hot chicken sandwich that included nopal.

The tripas taco draws on Nashville hot chicken: crisped beef intestine is coated in a fiery spiced oil and topped with a slaw-like escabeche of dill pickle slivers, nopal and dressed onion. Tripas, the small intestine of the cow or pig, is cleaned, simmered and then fried on a griddle until crunchy, and is one of the most prized fillings in Mexican street taquerías. Rojo's version keeps the traditional crisp texture while borrowing the heat and pickles of the American South.
