Señor Sisig is a San Francisco Filipino-Mexican food business, started as a truck in 2010, that serves the Filipino pork dish sisig in tacos, burritos and nachos.

History

Señor Sisig began operating in 2010, according to the San Francisco Chronicle, which included it in its 2019 list of the Bay Area's best food trucks. At that time the company ran six trucks across many locations, mostly in San Francisco, and appeared on Saturdays at the Ferry Plaza Farmers Market. The Infatuation's San Francisco taco coverage later listed a Señor Sisig location in the Mission District.

The business is built around sisig, a Filipino dish of chopped, seasoned pork, which it folds into Mexican formats. The Chronicle highlighted the classic pork burrito and the California burrito, which adds French fries, and noted that the trucks did not accept cash. The Infatuation describes the menu as loaded burritos, nachos and tacos.

Significance

Señor Sisig is one of the better-known examples of the Filipino-Mexican fusion that grew out of the Bay Area's food-truck boom, combining two cuisines with deep roots in California and many shared ingredients, such as citrus, vinegar and chiles.
