Silvio Campos is a Yucatecan cook known for pit-roasted cochinita pibil at Pueblo Pibil in Tixkokob, Yucatán, which received a Michelin Bib Gourmand in 2026.

Career

Campos leads the kitchen at Pueblo Pibil, a restaurant in a converted eighteenth-century house in the Yucatán town of Tixkokob. The Michelin Guide calls him a master of the pibil, the Yucatecan method of cooking meat buried in an underground pit. His cochinita pibil is marinated in citrus, wrapped in banana leaves and cooked over chukum and catzín wood for more than fifteen hours.

Pueblo Pibil was awarded a Bib Gourmand when the Michelin Guide added Yucatán in its 2026 edition.
