A taco de sal ("salt taco") is the simplest of tacos: a hot corn tortilla, fresh from the comal, sprinkled with salt and rolled up, eaten as a snack at the tortillería or at home and associated both with the pleasure of fresh masa and with lean times.

Description

The taco de sal needs nothing but a freshly cooked tortilla and a pinch of salt. Jorge Gaviria, founder of the heirloom masa company Masienda and author of the 2022 book Masa, describes rolling the salted tortilla between the palms and eating it standing up, and argues that the salt brings out the natural sweetness and earthiness of nixtamalized corn. He notes that tortillerías often keep a salt shaker near the counter for exactly this purpose. L.A. TACO adds that tortillerías commonly hand out salted tortillas so customers can taste the product while they wait in line.

Cultural meaning

The salt taco carries two meanings at once. For many Mexicans it is a nostalgic treat that celebrates good tortillas; for families in Mexico and the U.S. Southwest who have struggled to make ends meet, it is also a reminder of meals made from almost nothing. L.A. TACO describes it as a snack for people who appreciate simple pleasures and, at the same time, a food tied to hardship.

In May 2022 a short video by Isaias Espinoza, a young Mexican cook, went viral on TikTok after he appeared to bury a tortilla in white powder and present it as a taco de sal. The clip turned out to be a prank, and L.A. TACO reported that it passed a million views, with thousands of comments from viewers who missed or mocked the joke.
