Taco Lab is a taquería on the Windsor Town Green in Sonoma County that fills tacos, burritos and bowls with fillings drawn from cuisines around the world.

History

Taco Lab opened on May 1 in a space at 9238 Old Redwood Highway, Suite 128, at the edge of the town square in Windsor, according to Sonoma Magazine, whose tag archive dates the story to May 2018. Its owner, Bill Cordell, also owns the Superburger restaurants. At opening it ran daily from late morning into the evening and had a large outdoor patio.

Concept and menu

Cordell described the idea as a menu without cultural borders, with one rule: everything has to fit into a taco, a burrito or a bowl. Inspiration came from Mexico, Brazil, Puerto Rico, China, India and elsewhere. The rotating proteins included carne asada and carnitas but also Brazilian beef with chimichurri, Indian-spiced chicken, jerk chicken and a meatless ground filling called the Imposter, plus daily specials.

Beyond tortillas, fillings could go into a burrito bowl, a quesadilla, a salad bowl or a loaded baked potato or yam. The menu also offered esquites, the Mexican street-corn salad, along with agua fresca, margaritas and sangria. The sources consulted do not confirm whether the restaurant is still operating.
