Tacos de Tripa de El Expiatorio is a night stand outside the Templo Expiatorio in León, Guanajuato, founded in 1985 and known for tripe tacos.

History

Carmen Santa Ana started the stand in 1985 outside the Templo Expiatorio, the large church near León's center. When Bonito León profiled it in 2016 it had been operating for 31 years and was managed by her son, Iván Rangel. It ran daily from about 8 p.m. to midnight and drew tourists, including visitors from the United States; Rangel said he often told American customers what tripe was only after they had eaten it. La Silla Rota's 2023 list of León's taco spots mentions tripe taquerías by the Expiatorio.

The tripe tacos come on a tortilla brushed with oil, with red or green salsa, and a chile de árbol salsa for those who want more heat. A side salad of radish, cucumber, bell pepper, jalapeño and jícama comes with the order, along with a soft drink or agua de jamaica. Chorizo tacos are also sold, and sopes and quesadillas appear on weekends.

According to León's municipal historical archive, as summarized by Bonito León, taco stands began to multiply in the city in the 1970s and kept growing through the 1980s and 1990s, many of them around the San Juan de Dios neighborhood and the historic center.
