Tacos Don Chicho
Tacos Don Chicho is a quesabirria truck at Belmont and DeWitt avenues in Fresno, California, run by chef Jose Rojas and named for his father.
History
Jose Rojas named the truck for his father, Narciso, known as Chicho, who brought the family to California from Jalisco. The truck operates four nights a week. Fresno's Taco Truck Throwdown, an annual contest started in 2011 by the Fresno Grizzlies minor-league baseball club, brings trucks to the ballpark where fans and a judging panel pick winners. After competing for three years, Don Chicho won the Judge's Choice award in 2024, its first trophy.
Menu
The menu is focused on quesabirria, griddled consomé-dipped tortillas filled with stewed beef and cheese. In addition to the standard beef version, the truck makes a shrimp quesabirria.
