Tacos El Zaga is a nighttime taco stand in Santa Ana known for suadero tacos with a pickled onion and habanero relish.

Overview

El Zaga is a street operation that OC Weekly's 2015 guide to Orange County tacos placed at the corner of Main Street and Wilshire Boulevard in Santa Ana, open only at night. The guide recommended its suadero tacos, topped with a pickled relish of red onion and habanero.

Suadero is a thin cut of beef from between the belly and the leg, a specialty of Mexico City taquerías, where it is slowly confited in fat on a domed griddle called a comal de choricera alongside chorizo and longaniza. The meat becomes tender with crisp edges and is chopped onto small doubled corn tortillas. The onion-habanero relish is more typical of the Yucatán Peninsula, where it accompanies cochinita pibil, and its pairing with suadero reflects the mixing of regional styles at Southern California stands.
