Tacos Jacinto
Tacos Jacinto is a Michoacán-style taco truck based in Fresno, California, started in the 1990s by the Martinez family in Fowler.
History
The Martinez family opened the business in Fowler, south of Fresno, in the 1990s, and it later became a Fresno-based truck. Fresno's Taco Truck Throwdown, an annual contest started in 2011 by the Fresno Grizzlies minor-league baseball club, brings trucks to the ballpark where fans and a judging panel pick winners. Tacos Jacinto entered for the first time in 2023 and won Judge's Choice; Fresnoland reports that its quesabirria sold out during that event.

There are about seven taco types, among them shrimp and quesabirria. The truck also sells birria ramen and an unusually long dessert list for a taco truck, including churro cheesecake, flan, chocoflan and esquite.
