Tacos Kokopelli
Tacos Kokopelli is a Tijuana taco business founded around 2011 by chef Guillermo "Oso" Campos, known for inventive seafood tacos that helped define Baja's chef-driven street food.
History
Kokopelli began as a street stand on Calle Melchor Ocampo, near Bulevar Agua Caliente in central Tijuana, about five months before OC Weekly profiled it in May 2012. Its founder, Guillermo "Oso" Campos Moreno, trained at Tijuana's culinary arts school and cooked in restaurants across Mexico and abroad, including Oud Sluis in the Netherlands, before opening the stand on limited savings after a restaurant partnership in Rosarito ended. His brother Pablo Campos and cook Orlando "Cricket" Miguel del Monte worked alongside him. A sit-down location soon followed on Calle Brasil in Colonia Cacho. The name refers to the Hopi deity of fertility and mischief.

Early signatures included the Gringos en vacaciones, a taco of grilled Anaheim chile with melted cheese, marlin pibil, pickled onion with habanero and avocado on a nixtamal tortilla; the Kraken, mesquite-grilled octopus in poblano pesto; the Mixteco, shrimp in adobo; and the Rasta, shrimp in Mexican pesto with roasted peppers and olives. House salsas ranged from a toasted chile and peanut mix to a roasted habanero emulsion.
